Autumn Harvest Salad

Depending on who you ask, we may be in late summer – or perhaps early fall. The mornings are cool, but the mid-afternoon heat is still sweltering. This week is expected to be the last for peaches, while apples and pears have already made their market debut.

In this moment between seasons, we start to think about pulling out sweaters and turning on our ovens — but if you’re like me, you’re not quite ready to commit to fall vibes just yet.

I want to cherish the last days of swimming in the creek, but of course, I can’t help being excited about the new, delicious produce popping up at the market each week. This week’s recipe helps hold both of these desires. This autumn-inspired salad features the cozy flavors of fall, paired with the fresh, raw simplicity of summer eating.

We were lucky enough to get this cherished transition-season weather at The Get Together last week. Our first-ever fundraising event was filled with bouquet-making, peach-cocktail drinking, and gathering over a shared desire for a more sustainable, equitable food system. Recipe

Ingredients:

1/4 cup raw pecans

2 tablespoons pumpkin seeds

3 tablespoons maple syrup

1/2 teaspoon cayenne pepper

1/4 teaspoon ground cinnamon

flaky sea salt

6 cups arugula or shredded kale

2 honeycrisp apples, thinly sliced

seeds from 1 pomegranate, or ½ cup dried cranberries

1/2 cup crumbled feta cheese

For the vinaigrette

1/3 cup extra virgin olive oil

1/4 cup apple cider vinegar

1 tablespoon dijon mustard

1 tablespoon apple butter (optional)

2 teaspoons honey or maple syrup

1 tablespoon fresh thyme leaves

2 teaspoons chopped fresh sage

salt and pepper

Directions:

Preheat oven to 350°F and line a baking sheet with parchment paper. On the sheet, toss pecans, pumpkin seeds, maple syrup, cayenne, and cinnamon. Spread in a single layer.

 

Bake for 10–15 minutes, until nuts are toasted. Sprinkle with sea salt. In a large bowl, mix arugula, apples, and pomegranate/cranberries. 

 

For the vinaigrette: add all ingredients to a jar, shake well, and adjust to taste. Toss salad with vinaigrette. Top with the toasted nuts and feta.
