Easy Vinaigrette

Vinaigrettes are a great way to spruce up your salads. They’re super easy to make—it can be as simple as rice wine vinegar and olive oil with some salt and pepper to taste. With vinaigrettes, you can also add herbs that you really love, like fresh thyme and parsley. Experiment until you find something you love!

Ingredients:

  • 1 cup olive oil
  • 1/3 cup apple cider vinegar (or any acid of your choice, like lemon/lime juice, red wine vinegar, or balsamic)
  • 2 tablespoons honey (optional for sweetness)
  • 1 tablespoon dijon mustard
  • 1/4 a shallot (minced and rinsed in cold water)
  • Salt and pepper to taste

Directions:

  1. Mix the dijon mustard and honey until they are well combined.
  2. Mince the shallot very finely and rinse under cold water. This will remove most of the bitterness.
  3. Add the shallots to the mixture along with some salt and pepper, then add vinegar and olive oil.
  4. Store your vinaigrettes in mason jars or a dressing shaker so that you can shake them up quickly, and ensure all the ingredients emulsify before dressing your salad.
  5. Experiment with different acids and herbs to find your perfect vinaigrette.
