One of our favorite parts of grabbing the most eye-catching and fresh foods at the market is that it encourages you to try new recipes you may have never thought of before. Check out these recipes below for ways to enjoy all of the flavors and ripeness of peak Colorado produce season!

Summer is a great time to enjoy thee juicy fruits at their ripest, which means it’s the best time to just enjoy them raw. However, we’re always up to learn a new way to enjoy some of our favorite market finds. For instance, the idea of sipping on a chilled peach gazpacho on a hot summer night gets sounds more refreshing each day. Or you could satisfy your sweet tooth by whipping up a quick apricot crisp while this early-season fruit is still available. When it comes to stone fruit, you can never go wrong.

It’s corn! Our favorite summer crop turned viral sensation, corn truly deserves all of the hype that it gets. Biting into corn on the cob when it’s at its peak ripeness cannot be replaced, but that’s not the only way you can enjoy corn. In fact, we bet you could find hundreds of sweet corn recipes online, spanning from corn ice cream to succotash to miso corn salad, there are endless possibilities and flavor combinations you can try with locally-grown sweet corn this summer.

Beets offer a great way to add a touch of sweetness to any dish. Try roasting them and adding them to a fresh summer salad with local goat cheese and ripe stone fruits, such as apricots or peaches. You can also try making Sri Lankan Beetroot Curry, which not only sounds delicious but also would be a delight to plate, with the bright red and pink colors of the beets stealing the show. Whatever you choose, don’t forget that you can eat the green leafy stems on your beets! We like them sautΓ©ed in olive oil and sprinkled with salt as a nutritious side dish.

One of the most versatile veggies out there, zucchini offers endless possibilities when it comes to planning out your meals. Zucchini boats can be easily customized to accommodate any dietary restrictions or cuisines, and are an easy way to help your family enjoy their daily dose of vegetables.
